Cooking Frozen Seekh Kebabs: Pan, Oven, Air Fryer and Tawa Methods

Cooking TipsBy the BURAAK FROZEN FOOD teamPublished October 8, 20263 min read

Seekh kebabs are a favourite in our part of the world, but cooking them from frozen intimidates many home cooks. Minced meat can dry out or stay raw inside if handled badly. The methods below give juicy, properly cooked kebabs, whether you have a gas stove, an oven or an air fryer.

First: raw or ready-to-eat?

Check the pack. Some frozen kebabs are fully cooked and only need heating; others are raw, marinated and need to be cooked all the way through. Raw minced chicken and mutton should reach an internal temperature of at least 71°C. If you are not sure, treat the kebab as raw and cook it thoroughly.

Should you thaw them?

Usually no. Cooking from frozen helps them hold their shape, because thawed mince can become soft and break. If you do want to thaw them, do it in the refrigerator for a few hours, and handle them gently. A slightly softened kebab is easier to slice and cook evenly.

Method 1: Pan or tawa (most common)

  1. Heat a non-stick pan or tawa on medium and add one to two tablespoons of oil or ghee.
  2. Place the frozen kebabs in a single layer without crowding.
  3. Cover with a lid for the first 4 to 5 minutes. The trapped steam heats the centre.
  4. Uncover, turn every 2 to 3 minutes until evenly browned. Total cooking time is typically 12 to 15 minutes.
  5. Cut one open to confirm no pink remains.

Medium heat is the key. High heat browns the outside while the centre stays cold.

Method 2: Air fryer

Preheat the air fryer to 180°C. Brush the kebabs lightly with oil, place them in a single layer and cook for 10 to 15 minutes, turning halfway. Thicker kebabs take longer. This method gives a lightly crisp surface with less oil.

Method 3: Oven

Preheat the oven to 200°C. Place kebabs on a lined baking tray or a wire rack over a tray, brush with oil and bake for 18 to 25 minutes, turning once or twice. For a charred look, switch to the grill setting for the last two to three minutes, watching closely so they don't burn.

Method 4: Gas flame finish

For a smoky flavour, cook the kebabs through on a pan first, then hold them briefly over a low flame using tongs, or use a skewer. Be careful with open flame near fat drips, and never leave it unattended.

How to keep them juicy

Serving ideas

Classic plate: sliced onion rings, lemon wedges and mint-coriander chutney.

Kebab roll: a hot laccha paratha or tortilla, kebab, onions, a smear of chutney and a squeeze of lemon, rolled tightly.

With biryani or pulao: serve as a side with raita.

As a sandwich: slice the kebab lengthwise and layer in toasted bread with mayo and lettuce.

Common mistakes

Storing leftovers

Let cooked kebabs cool for no more than an hour, then refrigerate in an airtight container and eat within two days. Reheat in a pan or air fryer until steaming hot, not in the microwave alone, so they keep some crispness.

Quick reference

Master one of these methods and seekh kebabs become one of the fastest, most satisfying meals you can make from the freezer.
