How to Store Frozen Chicken Safely at Home

Storage & SafetyBy the BURAAK FROZEN FOOD teamPublished October 8, 20264 min read

Frozen chicken is one of the most convenient things you can keep at home. Nuggets, popcorn chicken, seekh kebabs, cutlets and raw pieces can turn a busy evening into a proper meal in minutes. But the convenience only works if the chicken is stored properly from the moment it reaches your kitchen. This guide covers the questions we hear most often at our Mira Road shop.

Start with the right temperature

Food safety agencies recommend a freezer temperature of -18°C (0°F) or colder. At that temperature bacteria stop multiplying and quality loss slows down dramatically. Many household freezers drift warmer than this, especially if the door is opened often or the freezer is packed with warm items. A cheap freezer thermometer costs very little and is the easiest way to check. If your ice cream is soft or ice crystals form on pack surfaces, the freezer may be running too warm.

Get it home cold

Storage begins before you reach your freezer. Frozen chicken that sits in a hot bag on a scooter or in an auto for an hour has already started to thaw at the edges. Ask for insulated packing, keep the bag out of direct sun, and go straight home. In Mumbai's heat, the rule of thumb is to get frozen food into the freezer within 30 minutes. If the pack feels soft or has liquid pooled inside, it has partly thawed and should be cooked soon rather than refrozen for later.

Keep it in its packaging, then add a layer

Original sealed packs are designed for frozen storage, so leave them intact until you are ready to cook. Once a pack is opened, move what is left into a freezer-grade zip bag or an airtight container and press out as much air as possible. Air is what causes freezer burn, the dry, greyish patches that spoil texture. For raw chicken pieces, a second bag around the first also prevents any leaks from touching other food.

Portion before you freeze

If you buy a bulk pack, divide it into meal-sized portions before it goes into the freezer. A family of four might need only half a pack at a time. Portioned bags thaw faster, let you cook exactly what you need, and avoid the temptation to thaw a whole kilo for a single dinner. Lay the bags flat so they freeze into thin slabs; they stack neatly and thaw evenly.

Where to put it in the freezer

Raw chicken should sit on the lowest shelf or in a separate drawer, away from ready-to-eat items like cooked snacks, ice cream and bread. Frozen food does not drip, but packs can crack and leak when they thaw later. Keeping raw and cooked items apart is a simple habit that prevents cross-contamination. Do not overfill the freezer either; cold air needs to circulate around the packs.

How long does frozen chicken last?

Technically, food kept continuously at -18°C stays safe indefinitely, but quality declines over time. As a practical guide, plain raw chicken pieces taste best within about nine months, while breaded, marinated and pre-cooked products such as nuggets, fingers and kebabs are best used within the period printed on the pack, generally a few months. Write the date on any bag you repack, using a marker, so you are not guessing later.

Signs something has gone wrong

What about refreezing?

If raw chicken was thawed in the refrigerator and never got warm, it can be refrozen safely, though it will lose some moisture. If it was thawed in water, in a microwave, or left out, cook it first and then freeze the cooked dish. Never refreeze chicken that has been sitting at room temperature for more than two hours (one hour in hot weather above 32°C).

Quick checklist

Handled this way, frozen chicken stays safe, tastes better and wastes less. If you are ever unsure about a product you bought from us, call the shop and we will happily talk you through it.
